Star Ingredient: Kakadu Plum

The Kakadu Plum is officially known as Terminalia ferdinandiana, but can also be named gubinge, billygoat plum, green plum or murunga. It's found up from the north-western plains of Western Australia right up to the northern tip of Arnhem Land. Small, green, and firm; the creamy white flesh is usually eaten raw. The Kakadu Plum has long being used by the indigenous Australians  - the flesh, which is extremely highly concentrated in vitamin C, was eaten on long treks; whilst the tree bark was used to treat skin infections, boils, wounds or sores.
